For my Husband’s 35th birthday party I decided to try a few new appetizers and sides in place of the potato salad and macaroni salad. Caprese skewers consisting of tomato, fresh mozzarella, and basil was one of my endeavors and a win in my books. Tasty, fresh, and light for a hot day, couple that with being super easy to put together and totally beautiful on a white dish, Super Win! Recipe below.Ingredients:
1 package each small red tomatoes and small yellow tomatoes. I like to mix up with available colors but not necessary.
1 pack of fresh mozzarella cheese, sliced. Cut these into 4 small squares.
Fresh basil leaves tear in half or 3rds depending on size of leaves
Bamboo skewers
Directions:
Simply slide the ingredients onto the skewers in any order that you please. I like tomato, mozzarella, basil, repeat.
Serve with a balsamic glaze drizzled over or on the side and enjoy!!
